300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Place every ingredients into a saucepan, heat until it reaches a simmer, mixing until the sugar dissolves. After that, turn off the stove and leave to reach room temperature fully. Transfer into an sealable bottle, close it and store in the fridge, where it will keep for around one month.

Preparing the Premix: Mix all the liquids into one big jug, let it rest for one hour, then strain best through cheesecloth, to ensure it's fully clarified.

When ready to serve: Measure 85ml of your batch mix into your mixing glass filled with ice, and stir gently for about 60 seconds until cold. Strain to a cold coupe glass or a similar vessel, decorate with the cranberries and complete it using a brief mist with the mandarin essence over the top.
